Nasi Goreng Indonesia
Quantity Unit Ingredients
160 gram Steamed rice keep cold
10 gram Salad oil
5 gram Sliced shallot
5 gram chopped garlic
1 ea Chicken egg
25 gram Chicken meat cut to sliced or cube
25 gram Prawn or shrimp peeled
30 gram Long bean cut small piece
1 tsp Oyster sauce
1 tsp Fish gravy
1 tsp Sweet soy
10 gram Tomatoes sambal
For sambal terasi (350 gr)
100 ml Salad oil for sautéed
50 gram Shrimp paste
15 gram shallot
10 gram garlic
40 gram Big chili
6 gram Hot chili
100 gram tomato
5 gram candlenut
1 tsp Salt
5 gram Brown sugar
accompaniment
80 gram Fried Chicken leg
5 gram Shredded fried egg
10 gram Shrimp crackers
2 gram Fried shallot
10 gram Chili soy sauce
10 gram Sambal terasi
30 gram Vegetables pickle
Method:
-Heating the oil in side work, stir fried the chicken and shrimp, keep it side
-Break the egg and add to work, stir fried and add the shallot, garlic fried until the pragrant, continue with add sambal terasi. Put back the chicken, shrimps and rice together, stir well with slow heat. Added long bean and seasoning, stir well until the rice really split and the taste balance.
-Served the fried rice with accompaniment as vegetables acar, sweet soya, krupuk and sambal
For the sambal terasi:
-Cut all ingredients in small and sautéed until soft and get the aroma, taked off and resting until cold below than 5degrre and grind in stone grinder to ensure all well combine. Re-sautéed one more time to make sure the taste is correct.
