SWEET CORN AND GINGER SOUP WITH CONFIT SALMON AND CORIANDER
SWEETVCORN SOUP
2 onions, 3 garlic, 1 stem ginger, 8 corn
on the cob.
Finely chopped onion, garlic and ginger and
sweat off in a little olive oil. Add the corn and cover with water and boil for
10 minutes. Remove the pan from the heat, remove the kernels from the corn add
back to soup and bring back to boil. Boil for 3 minutes’ puree in blender a
pass through a fine sieve. To finish add a little mascarpone, butter, salt and
pepper, buzz until very frothy.
CONFIT SALMON
Confit the fillet of salmon in duck fat, at
very low temperature. Remove from fat and flakes into large flakes. Mix with
whole coriander leaves tomato concasse, chopped chives salt and white pepper
and a little truffle oil.
TO SERVE
Place salmon mix in the centre of a large
bowl pour around soiup making sure that it is frothy and garnish with chive
sticks and coriander leaves.
