STRAWBERRY SOUP WITH MASCARPONE CHEESE
INGREDIENTS
1kg strawberry, 500ml dessert wine or
champagne, 30 in no star-anise, 100gms sugar or to taste depending on the
sweetness of the strawberry, 4 vanilla pods, 1 large strawberry per person for
garnish, dry vanilla sticks, sprig of mint.
METHOD
Chop strawberry in to thin strips. Mix with
the sugar and wine. Scrape out the vanilla seeds and put into soup with pods.
Wrap anise in cloth and add to mix. Leave to macerate for 6 hours @ 80’c then
chills.
GARNISH
Slice the whole strawberry into thin slices
and arrange on a non-stick mat in the shape of a flower. Dry in warming
cupboard until crispy. Slice vanilla into thin sticks and dry in a warming
cupboard
TO PLATE
Pour a ladle of soup into a bowl. Keep the
fruit to the centre and quenelle the mascarpone on top. Place the strawberry on
top of this and garnish with the dry strawberry, vanilla and mint
NOTE
The soup should not to be too sweet if too
sweet then add a little lemon.
