THIN APPLE TAR WITH CARDAMOM ICE CREAM
INGREDIENTS
100GMS PUFF PASTRY, (8 inches’ circle),
25gms (1 spoon) of frangipane, 1 green apple.
METHOD
Peel and quarter the apple. Slice each
quarter into very thin slices. Spread the puff pastry with frangipane and layer
the apple around the tart. Use the whole apple for the tart. Dust the apple
with icing sugar and place between two sheets of grease proof paper and in
between two trays. Bake in a hot oven until golden brown. Place a weight on the
top tray to keep the tart thin and crisp.
CARDAMOM ICE CREAM
600ml milk, 300ml cream, 50 cardamom seeds,
5 egg yolks, 150gms sugar, 50gms glucose
METHOD
Boil cream and milk with cardamom seeds and
1 spoon glucose leave to infuse until cool. Mix egg yolks with sugar and
incorporate into cooled milk mix. Strain and churn in an ice cream machine.
