Procedure:
1. Mix all
ingredients together except olive oil at 23°C
2.
Add olive oil and mix at 2nd speed until 25°C
3.
Allowed dough to proof and have them fold in 4 ways
4.
Grease trays and hands with olive oil before handling the
dough and shape dough in baking tray
